We made coconut curry for dinner last night, and we had a partially used can of coconut milk. Wasting coconut milk is the worst, so we decided to make a batch of overnight oats.
I remembered absolutely loving a coconut latte at Starbucks, so decided to add in a little bit of cold brew concentrate as well. It was one of the best breakfasts I ever had. It was sweet, had great flavor, and I got a little bit of a caffeine kick, too!Â
These creamy overnight oats may be meal prep, but it’s SUPER easy. Just dump all your ingredients in an airtight container, give it a good stir, then cover and let it sit overnight. The next day, all you have to do is add your toppings and DEVOUR.

- Lite coconut milk: We used light coconut milk for a lighter and healthier version that still tastes nice and creamy.
